Executive Chef

Upali Mallawa is Executive Chef and Owner of East West Caters established in Austin Texas, U.S.A. East West Caters has been operational since October 2008. Upali graduated from the Culinary Academy Colombo, Sri-Lanka in 1984. He initially specialized in Western Cuisine and worked at the Mount Lavinia Hotel, and at the Taj Samudra Hotel, Colombo, Sri-Lanka. While employed as Banquet Chef at the Taj Samudra Hotel, he also specialized in French cuisine. During this period he travelled to India and trained in Indian cuisine.

He was the recipient of the Gold Medal in Culinary Arts, Sri-Lanka 1994. He also was a regular contributor of recipes and food preparation articles to many Sri-Lankan news papers.

Upali trained in Caribbean food during the nearly four years he worked as sous chef and later as Chef in Bermuda, at the Harbor Front Restaurant and Hamilton Princess Hotel.

He is currently sous chef in charge of weddings and banquets at the Four Seasons Hotel, Austin, Texas, U.S.A, a position he has held since the year 2000.
